The requisites that permit a wine to be called “Chianti Classico DOCG” are the provenance from a given territory of central Tuscany; and the strict adherence to all the rules of the production regulations established by the Consortium. A fundamental requisite is that the wine will be made by a minimum amount of 80% Sangiovese, the red variety typical of the zone. Among the principal sensory characteristics that a wine must have in order to be a Chianti Classico, as indicated by the production rules, is the ruby red color that can become intense and profound; the scent must offer floral notes of violets and irises, combined with a typical character of red fruit. The flavor is harmonious, dry, and sapid with a good level of tannin that thins as time goes by, becoming soft and velvety.
